“Cicchetti” are some kind of appetizer served together with spritz and Baccalà with polenta is one of the most famous food.
And that’s delicious!
But it can be served also as a super tasty main course (in different quantity).
Ingredients for 2 people:
I’ll use a plan mixer
- 300 gr softened stockfish / dried codfish
- 3 dl olive oil
- 1 garlic
- ½ lemon
- Polenta
- Parsley
Procedure:
First of all, prepare softened stockfish for the cooking (if you have dried stockfish first, start by putting it into a bowl with cold water for about 72 hours, by changing water every 12 hours)
Boil the softened stockfish for about 15-20 minutes together with juice of ½ lemon, garlic.
Then remove the skin and the fishbones.
After that, put the stockfish boiled in a plan mixer with wire whip.
Start the mixing by gradually adding olive oil and whipping the fish.
Finally serve the stockfish whipped on polenta and add some parsley leaves.
Baccalà is ready to be served!
